This is a simple do it yourself ice cream recipe and if you have children, this is a great recipe to do together. Our head chef guarantees it won’t last long once you have made it!

You will need the following:

Ingredients List

  • One 400g can of condensed milk
  • 480 ml double cream
  • One tsp vanilla essence or any flavouring you might like to use
  • 200g of any chopped chocolate, nuts or pretty much anything you would like to add

Equipment List

  • Weighing scales
  • Mixing bowl x2
  • Whisk
  • Teaspoon
  • 5 ltr freezer tub with lid
  • Grease proof paper
  • Rubber Spatula or large spoon

Method

First make sure there is space in your freezer for the ice cream once it is made. You might want to put any chocolate into the fridge/freezer before you start, this will make it easier to crush later if you are adding chocolate. Subsequently you can also prepare any other ingredients you might want to add first, for example, nuts, chopped or dried fruit etc.

Whisk the double cream into stiff peaks and leave to one side. Pour the sweet condensed milk into a separate mixing bowl, and mix in the flavouring you have chosen, add roughly 100g of the whipped cream to the condensed milk and whisk together.

Fold in the remaining cream using a large spoon or rubber spatula. Once you have a smooth mix, add any other ingredient i.e. nuts, chocolate, fruit etc and fold in also.

Then simply transfer your mix into the ice cream tub you have selected, cut a piece of greaseproof paper and place on top of the ice-cream along with the lid and pop into your freezer.

Your delicious ice-cream will be ready to eat in 2-3 hours. To guarantee a soft ice cream, eat within two weeks of making. (we don’t think that will be very difficult!)
