(multiply to make the volume you need!)

  • 250ml double cream
  • 4 egg yolks
  • 65 g caster sugar
  • 1/2 vanilla pod
  1. split the vanilla pod, add to the cream and boil
  2. mix the sugar and egg yolks
  3. add the hot cream to the egg yolks
  4. return to the heat and stir until thickened, be careful not to boil!!
